The collection

No occasion in this collection happens twice.

Each one is conceived for a single place, a single chef and a single table.

The places

Remarkable places. Rarely opened for a private table.

Villas, palaces and historic houses, chosen for their architecture and for what happened inside them.

The owner, or someone who speaks for them, walks the guests through the place and tells its story. That story becomes part of the meal, through the chef's interpretation.

The encounter

A rising chef is invited into the place long before anyone is seated.

He walks the rooms and is told what happened in them, who lived there, what they were built for. The menu he writes afterwards comes out of that visit. It belongs to this place and to no other.

The wines are chosen alongside the menu, for the food and for the room. On rare and historic wines

Our guests are never named, and nothing is published about an occasion without the agreement of everyone concerned.

Practical

Rarely more than twelve at the table.
The first occasions are on the Riviera, between Saint-Tropez and the Italian border.
A place that opens does so once, sometimes twice in a season.
We accept a limited number of commissions each year.
