Led to the top of his art by his audacity, vision and commitments, the chef of Mirazur*** (Menton, France) offers a cuisine that is instinctive, generous and deeply respectful of the environment.

Convinced of the virtues of short food chains and appreciative of the links he has forged with the ecosystems around him, Mauro Colagreco promotes a circular gastronomy that greatly respects nature’s cycles. . As a responsible chef, he constantly transcends codes and boundaries, working every day to contribute, as best he can and within his means, to the environmental transition. Beyond borders, a citizen of the world, in constant movement and reflection, Colagreco strives for excellence, always imbuing it with his great simplicity.

For excellence, always imbuing it with his great simplicity. In 2006, Mauro Colagreco and his family settled in Menton, near the Italian border, to build what Mirazur*** is today. Much more than a three-star restaurant, voted the best restaurant in the world in 2019, with its chef’s table and breathtaking setting on the Mediterranean sea, Mirazur*** is in fact a well-preserved domain of 5 hectares and a philosophy of living in total harmony with nature.

The cuisine there is inspired and guided by this and by the love of the region. Centered around vegetables (not vegetarian), in constant evolution, it follows the 365 seasons and follows the cycles of the moon.

In 2020, Colagreco continued his ascent and became the first chef to obtain the very demanding « Plastic-Free » certification for his flagship restaurant in Menton, crowning many years of effort and R&D to eradicate single-use plastics from his kitchens.

A passionate commitment to the earth and the oceans that was noticed by UNESCO, which asked him to become a Goodwill Ambassador for Biodiversity from 2022.

The following year, Colagreco took on the position of vice-president of Relais & Châteaux; two important and complementary roles for a chef who, since his arrival on the Riviera, has been a champion of sustainable gastronomy and who, on a daily basis, is committed to safeguarding the world’s culinary heritage, particularly through the biodiversity of flora and fauna.

Today, at the head of several restaurants (London, Tokyo, Hong Kong, Singapore, Dubai, Palm Beach, Buenos Aires, etc.) in which he shares his deep convictions, and driven by his desire to learn and progress, Mauro Colagreco pursues his dreams, systematically placing the concerns of our earth at the center of his creations.
